Roast pork Recipe - Step 1

heat up water

  • wash meat
  • heat up water with 1 clove of garlic, 1 onion, 1/2 coffee spoon of salt, 1 soupcon of pepper and 1 coffee spoon of caraway
   
add meat

add meat

  • add meat with rind on bottom in boiling water
  • cook for approx. 3 to 5 minutes
   
cut in meat, cupping

cut in meat

  • cut meat with sharp knife on rind side diagonal (this is called "cupping")
  • put some meat bones in remaining water
  • cook briefly at reduced heat with closed lid
  • this soup can be used to pour over roast pork
   
rub in spices

  • press garlic
  • mix with tbsp of oil and spices (salt, pepper, chili, caraway)
  • rub in roast portk on both sides properly

  • heat up oil in pan
  • put in roast pork with rind on bottom side

  • roast crispy
  • subsequently turn meat and roast it all around. This way meat juice does not escape and roast pork stays juicy.

  • Preheat oven at approx. 200°C
  • Put roast pork in deep pan
  • Roast meat for approx. 1,5 hours and constantly douse it
  • Tip: If top side gets to dark, then cover it with aluminium foil.

  • remove roast pork from oven
  • let it be for approx. 5 minutes
  • then cut in slices with sharp knife or electric knife
  • Recommendation: Hereto dumplings in a napkin with sourcrout or rice and salad go perfectly along.
